Butter Bunnies Stacked

White Chocolate Butter Bunny Bites

Okie, so I may have fibbed just a teensy bit about these White Chocolate Butter Bunnies. These actually aren’t made of white chocolate (gasp!). BUT they do taste EXACTLY like it with an added coconutty twist for extra awesomeness.

You know I actually had a completely different plan in mind for my Easter recipe this season? I was planning to make coconut macaroons that would look like bunny tales but as I did some idea hunting on Pinterest after about 50 pins these finally formulated in my mind. I do have to extend some credit to our friends over at Coconut Mama and Empowered Sustenance for providing their inspirational recipes as the base to these White Chocolate Butter Bunnies. I <3 the internet, don’t you!

Easter is 2 days away and you’re probably making a mental checklist of ALL the stuff you need to get done before then so without further ado let’s get to it, shall we?READ MORE

TGI Cornbread Recipe

So, I recently started up a Facebook group, in which we’ve started discussing the topic of the beginning of the “holiday stress period” i.e. The period in which we fret about gaining weight from things like:

  • The extra tastes we unconsciously graze on as we stroll through the grocery store
  • The basket of holiday cookies so thoughtfully given to us by our loved ones over which we feel guilted into eating a few…which in turn (and unbeknownst to our subconscious) morphs into devouring the entire thing
  • The surge in Cortisol from stressing about keeping our sh** together and avoiding food-and-life-shaming from the crowd of (sometimes-judgmental) 20+ people for which we’re preparing to host a gigantic holiday meal & party
  • And, probably lots more…

And then, I asked my people the following:READ MORE

Sakana Bliss Bowl – A One-Skillet Meal

Cooking is easy.

Did you just quizzically raise an eyebrow and think “Yea right!” to yourself?

Ok fine. Let me rephrase that for you. Cooking CAN be easy.

Better?

Look. I know it might not be inherently easy because, well…there are the ingredients to consider, and then the chopping and the roasting, the boiling, the steaming, the sautéing and of course…the mountain of dishes left over after each kitchen escapade. Whoo! That was a mouthful (even for me).

The 6 Best Chocolate Bars Ever!

Aaaah chocolate, or shall I say, cacao? The delicacy that actually does grow on trees. Known for it’s healthy fat, antioxidant, blood-pressure and cardiovascular disease lowering properties. And, also known as a classic Valentine’s Day gift. I can’t stop the chocolate craze on Valentine’s Day and I don’t really want to. But I do want to modify it, so that if you’re consuming it, you’re consuming the best of it. I’ve picked out what in my opinion are the 6 best tasting, best nutrient dense and best satisfying chocolate bars I’ve ever had. Ready?READ MORE

Crunchola Granola Recipe (Gluten-Free, Grain-Free, Paleo & Vegan Friendly)

Cereal…something that even in my youth, I have never loved. If you offered me a choice between an omelette and a bowl of Cinnamon Toast Crunch, the omelette would win every time, without fail. But granola, now that’s a different story! I remember waking up to the smell of my Mom’s freshly baked granola. Once my nose alerted my brain that the heavenly honey and almond doused air floating through my nostrils meant home made granola, my sleep-deprived, teenage body had a renewed purpose to quit pressing snooze and hop out of bed. READ MORE
