30 Memorial Day Weekend Recipes

Memorial Day is upon us which means we are officially springing into summer! Can you see it? The succulent burger BBQ’s, the trips to the beaches, slurping juicy popsicles as quick as you can (before they melt all the way down your arm) and hammock lounging with a mystery thriller in one hand and a fruity cocktail in the other?!

Aaaaaah yes, those are the memories that stick out in my mind when the begging of summer rolls around.

However, with those memories also sometimes come the worry of “what the heck am I going to cook/bring/eat at my family/friend’s cookout this weekend?!”. I know it can be easy to get stressed out and anxious about having to navigate the nutritional waters whether you’re at home or away, but the truth is, it doesn’t have to be a crazy struggle. Sure, you’ll be facing gobs of ice cream, wonderbread hot dog buns and gobs of questionable grilled meat that might be a little bit of challenge to turn down, but once you feast your eyes below and check out the incredible resource we’ve put together for, you’ll be brimming with easy recipe ideas that you can’t wait to make and share! And, that anxiety you were having earlier will be a thing of the past 🙂

Butter Bunnies Stacked

White Chocolate Butter Bunny Bites

Okie, so I may have fibbed just a teensy bit about these White Chocolate Butter Bunnies. These actually aren’t made of white chocolate (gasp!). BUT they do taste EXACTLY like it with an added coconutty twist for extra awesomeness.

You know I actually had a completely different plan in mind for my Easter recipe this season? I was planning to make coconut macaroons that would look like bunny tales but as I did some idea hunting on Pinterest after about 50 pins these finally formulated in my mind. I do have to extend some credit to our friends over at Coconut Mama and Empowered Sustenance for providing their inspirational recipes as the base to these White Chocolate Butter Bunnies. I <3 the internet, don’t you!

Easter is 2 days away and you’re probably making a mental checklist of ALL the stuff you need to get done before then so without further ado let’s get to it, shall we?READ MORE

Paleo Hamantaschen for Purim

When I was a little girl Purim was my favorite holiday so naturally hamantaschen were my favorite thing to eat on that holiday.

For those of you that are unfamiliar with Purim let me give you a little background so you don’t feel lost the whole way through this post 😉 Purim is a Jewish holiday that celebrates the courage of a very special woman named Esther and, of course, the Jewish people escaping total annihilation. As a kid, hearing this story was awesome because it’s got all of the components of an epic tale à la LOTR or Camelot: kings, romance, royals getting banished, a wise elder (who looks strangely Gandolf-like in all the picture books), a pauperess-turned-queen, acts of immeasurable bravery, a bad guy who gets hanged, plus it takes place in a far away land (The Persian Empire)! What’s not to love?!

Purple Potato & Cauliflower Colcannon

I was doing some research for recipe ideas so that I could come up with something really special this year for St. Patrick’s Day. Last year I did a really great Green Juice but still, I wanted to come up with something new for us. Ya see, although I’m not Irish, St. Patrick’s Day just so happens to be my Grandma’s birthday. Sadly, she’s no longer around to read the annual dedication post + recipe I write for her but I love St. Patty’s Day all the more because of her and always celebrate it!

How to Guiltlessly Indulge During the Holidays

I promise you, this post is not what you think it is. Read on if my devil’s advocacy has peaked your curiosity.

Do you ever really want to bring up a conversation, but have no idea where to start? Bingo! That’s about where I’m at. Every time I sign into Facebook or Instagram or whatever SM platform, I’m seeing this topic being covered forwards and backwards. Which then begs the question, what on earth can I add here that you haven’t heard that would ACTUALLY HELP you?

So, when I don’t know where to start, I actually head straight to the dictionary. Oddly enough, reminding myself of the pure definition of a word always helps.
