Gluten-Free Paleo Latke Recipe

Easy, Oven Baked (Gluten-Free & Paleo) Potato Latkes

I’ll be honest. It feels like I’ve been working on this recipe for years!

I’ve tried many times to make the perfect, gluten-free & paleo potato latke, but try as I might (and I tried a lot), I just didn’t master it until 2017.

Now, as listed in the title, this recipe is for oven baked (i.e. oven fried) latkes. I made the recipe this way not necessarily because baking latkes (this way) is healthier (don’t get me wrong, these latkes have tons of health promoting ingredients in them), but because I’m a new Mom and a busy Mom. As much as in the past I would have been perfectly happy to stand in front of the stove flipping latkes for hours til my hearts delight, that doesn’t really work for my schedule anymore. 

Baking latkes is easier because I put all of the latkes in the oven at once, set them and forget them until the timer goes off 12-15 minutes later. And then, it’s just a bunch of batch flipping before finishing. No flipping and checking, flipping and checking, which is what I end up doing when I pan fry them. To me, that’s waaay easier.

Okie, so I may have fibbed just a teensy bit about these White Chocolate Butter Bunnies. These actually aren’t made of white chocolate (gasp!). BUT they do taste EXACTLY like it with an added coconutty twist for extra awesomeness.

You know I actually had a completely different plan in mind for my Easter recipe this season? I was planning to make coconut macaroons that would look like bunny tales but as I did some idea hunting on Pinterest after about 50 pins these finally formulated in my mind. I do have to extend some credit to our friends over at Coconut Mama and Empowered Sustenance for providing their inspirational recipes as the base to these White Chocolate Butter Bunnies. Paleo Hamantaschen for Purim

When I was a little girl Purim was my favorite holiday so naturally hamantaschen were my favorite thing to eat on that holiday.

For those of you that are unfamiliar with Purim let me give you a little background so you don’t feel lost the whole way through this post 😉 Purim is a Jewish holiday that celebrates the courage of a very special woman named Esther and, of course, the Jewish people escaping total annihilation. As a kid, hearing this story was awesome because it’s got all of the components of an epic tale à la LOTR or Camelot: kings, romance, royals getting banished, a wise elder (who looks strangely Gandolf-like in all the picture books), a pauperess-turned-queen, acts of immeasurable bravery, a bad guy who gets hanged, plus it takes place in a far away land (The Persian Empire)! What’s not to love?!

I was doing some research for recipe ideas so that I could come up with something really special this year for St. Patrick’s Day. Last year I did a really great Green Juice but still, I wanted to come up with something new for us. Ya see, although I’m not Irish, St. Patrick’s Day just so happens to be my Grandma’s birthday. Sadly, she’s no longer around to read the annual dedication post + recipe I write for her but I love St. Patty’s Day all the more because of her and always celebrate it!
