30 Memorial Day Weekend Recipes

Memorial Day is upon us which means we are officially springing into summer! Can you see it? The succulent burger BBQ’s, the trips to the beaches, slurping juicy popsicles as quick as you can (before they melt all the way down your arm) and hammock lounging with a mystery thriller in one hand and a fruity cocktail in the other?!

Aaaaaah yes, those are the memories that stick out in my mind when the begging of summer rolls around. 

However, with those memories also sometimes come the worry of “what the heck am I going to cook/bring/eat at my family/friend’s cookout this weekend?!”. I know it can be easy to get stressed out and anxious about having to navigate the nutritional waters whether you’re at home or away, but the truth is, it doesn’t have to be a crazy struggle. Sure, you’ll be facing gobs of ice cream, wonderbread hot dog buns and gobs of questionable grilled meat that might be a little bit of challenge to turn down, but once you feast your eyes below and check out the incredible resource we’ve put together for, you’ll be brimming with easy recipe ideas that you can’t wait to make and share! Carrot Parsley Salad

Depending on where you are in the world, carrots are grown year-round. Although technically, they’re a cool-season crop since optimal growing temperatures range from 60º to 70ºF. So again, depending on where you are in the world, “carrot season” could be winter, spring, summer or fall. 
 
I’m from Michigan, where springtime tends to fall right into that perfect 60º to 70ºF range, perfect for growing carrots. So, for me, there’s  nothing that reminds me of spring & summer quite as much as carrot tops. I think it’s in the way that they just shoot through the soil like newly budding trees! So cute. So fresh. And, so very kelly green. 
 

By the way, there’s definitely something to eating fruits and veggies that are in season

  1. Fruits and veggies that have had higher exposure to natural sunlight will also contain higher levels of antioxidants! In the case of carrots and carrot salad, we’re referring to the antioxidant beta-carotene, which gets converted into vitamin A, which protects your eye’s photoreceptors and may even help restore issues with vision. Guess my parents totally hit the nail on the head whenever they insisted I eat carrots because they were ‘good for my eyes’! (1
  2. They’re usually cleaner (i.e free-er of pesticides, waxes, chemicals and preservatives) because produce that is in season simply doesn’t need as much assistance in resisting spoilage as produce that is out of season. (2)
  3. The taste! You just can’t beat it. They’re always crisper, juicier, more brightly colored and smell amazing!

Alley’s Plush Peach Salad

I’m excited to announce that Alley’s Plush Peach Salad is one of the first personalized real food recipe dishes I’ve ever made!

As many of you may know, I run a Facebook community called Code to Wellness: Feeling Damn Good in Your Own Skin. Around the time of my birthday, I ran a few different giveaways in the group and one of them was entering a raffle for to win a personalized real food recipe designed just for you! I selected two winners at random and Alley was one of them.

We hopped on the phone and chatted about her favorite ingredients, her favorite dishes, her health goals, desired texture & mouth feel, and the experience she craved for in this new dish. I took notes like a madwoman as she shared her love for all sorts of fruits, veggies and proteins (avocado, peach, seafood), ethnic foods (Japanese, Thai, Indian), and creamy textures (especially in the form of soups and sauces). She also shared with me that she wanted a luxurious meal, that was filling yet weight-loss + health promoting – a combination between instant gratification (the kind we all desire from a bite of a favorite dish), true satiety, digestive peace and zero desire to “beat herself up” afterward.

Creamy Avocado Coconut Protein Smoothie

As I was going through the Code to Wellness website the other day and doing a little spring cleaning throughout the blog posts that are up, I realized that there was only one protein smoothie post.

ONLY ONE!

“What the heck! How can that be?!” were the thoughts that ran through my mind and apparently out my mouth (it was kind of hilarious…I didn’t mean to say it out load and ended up surprising my own self 😛 huge nerd moment…). It was especially odd because I feel like all I’ve been doing lately is drinking protein smoothies. I walked into my Dermatologists’ office for a routine check-up and when he offered the chance to do a Xymogen’s 6-Day-Detox I jumped at it (because, ya know, that’s kinda my thing!). 

Anyways, I have a backlog of protein smoothie recipes I’ve just been itching to share with you guys. I picked out this one out from the bunch because a) it’s flipping great b) it has avocado in it c) it requires no external sweetener of any kind d) it’s a pretty minty green color e) it’s full of healthy saturated and monounsaturated fat from the coconut milk + the avocado (most smoothies only focus on the fruit and the protein content…not this one!) f) it’s not one of those watery smoothies that you look at and think, “Man…what can I add in to thicken this thing up?”, because it’s exactly how a smoothie should be – thick, creamy and full-bodied.

White Chocolate Butter Bunny Bites

Okie, so I may have fibbed just a teensy bit about these White Chocolate Butter Bunnies. These actually aren’t made of white chocolate (gasp!). BUT they do taste EXACTLY like it with an added coconutty twist for extra awesomeness.

You know I actually had a completely different plan in mind for my Easter recipe this season? I was planning to make coconut macaroons that would look like bunny tales but as I did some idea hunting on Pinterest after about 50 pins these finally formulated in my mind. I do have to extend some credit to our friends over at Coconut Mama and Empowered Sustenance for providing their inspirational recipes as the base to these White Chocolate Butter Bunnies. I <3 the internet, don’t you!
